CMAE’s executive education course on Food and Beverage Management was recently completed in Dublin.
Sixteen club industry professionals, all of whom have Food and Beverage related responsibilities at their clubs, took part in the 5-day residential programme that covered a broad food and beverage based curriculum.

The week got off to a great start with a presentation by Kevin Bozada, Clubhouse Manager of Augusta National GC on their Club F & B Standards, which set the scene for the week. Steven Brown and Sharron Ruttledge from Inn-Formation (a UK based F & B Consultancy) covered cost controls, stock management, special event planning and F & B marketing.
A more practical element was introduced to the programme with delegates training to be Baristas and learning how to drive coffee sales with a superior product. Michelin Starred Chef, Oliver Dunne, then led a full day’s training in the local Robyn’s Nest Cookery School kitchen, to enable delegates to have “hands on” experience of working with a top professional.
Other education sessions included food and wine matching with Lisa O’Doherty the Sommelier at the K Club, Food and Nutrition by Annette Sweeney, Menu Engineering by Michael Braidwood, CCM and the use of technology from an F&B perspective by Peter Kirk of Jonas. During the week the delegates had the opportunity to visit two leading clubs in Dublin: the Fitzwilliams Club and St Stephens Green Hibernian Club to gain key inside information on running a top club from an F&B viewpoint. Leading Business consultant, Bill Sanderson, wrapped up the week, with a session on getting the most out of your team.

The MDP Food and Beverage course is one of five, week long, education programmes delivered by CMAE throughout Europe. The others cover topics such as Operations, Building and Leading the Club Team, Strategy and Leadership and Golf Operations.
The MDP pathway was originally developed by the Club Managers Association of America and thanks to their vision and generosity has been given to CMAE who adapted the materials for the European Golf, Sports and City Club Markets.
