CMAE’s pilot Food and Beverage MDP cooks up a storm!

The Club Managers Association of Europe (CMAE) is delighted to announce that the pilot Management Development Programme on Food and Beverage (MDP F&B), recently delivered in Dublin, Ireland, was a complete success with very high satisfaction ratings by the delegates.

The Club Managers Association of Europe (CMAE) is delighted to announce that the pilot Management Development Programme on Food and Beverage (MDP F&B), recently delivered in Dublin, Ireland, was a complete success with very high satisfaction ratings by the delegates.

The MDP F&B was the latest step on the CMAE’s Education Pathway following the successful delivery over the last 3 years of MDP Parts One and Two and the more recently launched MDP Golf.

Delegates from Ireland, England. Scotland, Holland, Norway, France, Spain and Switzerland travelled to the Emerald Isle and were treated to a wide range of F&B skills and knowledge delivered by leading F&B industry experts.

Programme aims were to develop the delegates Food & Beverage knowledge to improve the hospitality experience at their Clubs. Tools were provided to manage and raise standards in Front of House operations, controlling costs, driving sales and the ability to work closer with their team to achieve better results for their Clubs and members.

The Dublin Cookery School played host to a practical culinary experience for the delegates that gave them a greater understanding of the pressures of a kitchen environment and menu design.

Leading F&B operations consultant Steven Brown took delegates through the details on key costings involved in operating a successful operation and identified KPI’s to monitor.

Lisa O’Doherty – Sommelier at the 5 Star K Club gave delegates the tools to be able to upsell wines and tips to improve the service. This also included a wine tasting and food matching, while Sharron Ruttledge discussed key themes in her full day session, including Advanced Event Planning, HACCP, Food Service Marketing & Customer Service.

Away from the class room (and kitchen) a Barista from an Artisan Supplier showed the importance of quality coffee and how training is key to having the consistent standards to grow this revenue stream. A favourite activity of the week was a VIP visit to the Guinness Storehouse to experience the No1 Tourist Attraction in Ireland.

Delegates also experienced one of the top F&B dining clubs in Ireland with a tour of St Stephens Green Club. The week concluded with a sponsored dinner by Club Network where 15 Club Managers joined the delegates at Killiney Golf Club to share ideas, discuss industry trends and new technology in F&B at their Clubs.

The MDP pathway was originally developed by the Club Managers Association of America and thanks to their vision and generosity has been given to CMAE who have adapted the materials for the European Golf, Sports and City Club Markets.

The next CMAE Food and Beverage MDP is planned for the second half of 2015.
